{Eat Local} Sweet Potato and Pecan Stuffed French Toast

Necessity is the mother of invention, especially when it’s the end of the week and I need to use up bits of this or that leftover occupying shelf space in the refrigerator, like a half cup of baked, mashed sweet potato. 

I picked up a loaf of Ninth Street Bakery‘s Challah while at South Durham Farmers’ Market this past Saturday intending to make french toast for Sunday Brunch at home. Inspiration struck that morning and that last little bit of sweet potato ended up being the stuffing in my Sweet Potato and Pecan Stuffed French Toast.
